What is gluten?
Gluten is the protein found in grains such as wheat, rye, spelt and barley and it affects people in very different ways.
Around 1% of the western world’s population has celiac disease; an autoimmune disease where the body mistakes gluten for a threat. The body reacts by attacking gluten proteins; this response unfortunately also damages the gut wall, causes severe digestive issues and can lead to nutrient deficiencies.
